While I am clueless as to the technical feasability of hooking up a Pocket PC to a D-SLR, the basic idea is excellent. I have had a demo of the Leaf Valeo 11 with the dedicated Pocket PC. It is the only LCD screen that has the size, the contrast and the resolution to really permit you to evaluate the quality of the digital image in a critical way. All of the other LCD screens with D-SLRs are ok for looking at histograms, but, to me, are useless for image evaluation because they are too small and too difficult to see in the field. The iPaq for the Leaf backs, OTOH, is amazing. Yes, it is still another piece of gear to schlep around and keep track of, but the tradeoff of convenience for functionality may very well be worthwhile for many users.
