I have been printing with Ventura on a new Mac Mini M1 with no issues what so ever and the prints match perfectly to the ones from my old Mac Pro (2010-2012) running Mojave. However I always print from Photoshop, including CS PS 6, PS 2021, and PS 2023 on Ventura/Mac Mini. They all produces exactly the same results. However I have a Canon Pro 4100 and use their Print & Layout plug in within PS which to me is far superior to the old style of CMD + P routine. Never cared for printing out of Lightroom but use it extensively for other task.
Cutting to the chase, I am inclined to think something in your new workflow on Ventura/Lightroom is amiss. What that might be is anyones guess though. I would encourage you to make some prints from within PS using precisely the same methods and workflow you've used on other computers. If that results in better and more consistent prints, then you know its something within the Lightroom workflow that is incorrect.
