I have an xrite i-1.  Once i've stepped through all of the calibration, is there something, other than seeing the results with the before and after option, or with printing match to monitor, that I should check or keep an eye out for that would indicate I may have used inappropriate settings?  For example, the mapping to the gamut chart?  Are there any stats or anything I could check?

If you are using the Match 3 software for the Eye One, there is a validator process you can run that will tell you the Delta-E of your calibrated monitor.  In general, a Delta-E of less than 1 is good. Between 1 and 2 is OK. Greater than 2 is marginal.  Greater than 3 is not so good.  You find the validator in the Match 3 help menu.  

The other thing that can be important to check is your measured luminance that Match 3 gives you at the end of the calibration process.  If it is above a range of about 100-140, you will probably have trouble matching prints.  The prints will tend to come out dark (since the image you are seeing on-screen is really bright).
