Great thread.  I'll add my own 2 cents.

Like BobTrips, start by asking what type of pictures you want.  For me, high quality environmental portraits, landscapes, architecture and street. 

I carry the following
D700
14-24/2.8
35/1.4
45/2.8 tilt shift
70-300 4-5.6
Manfrotto carbon tripod and ball head
about 70gb worth of memory cards
external shutter release
lens cloth

I also carry three bags
Domke F-6
ThinkTank shape shifter
Osprey Sojourn 28
luggage locks and lock to secure bags to immovable objects

If you can swing it financially, get a D7000 instead of the D60 or the D90, not just for image quality reasons, but also becausee it has two SD card slots.
