HP Pro Satin, and Hahnemuhle PhotoRag Baryta. Matte paper is going to be classic Photo Rag or believe it or not the inexpensive Litho Realistic HP media which is like an ultra smooth. For super high colour , HP High Gloss pro PRoofing has the highest gamut suitable for flashy colours, but is thin and fragile.

Thanks for the suggestions guys! I've ordered a roll of Pro Satin for color and Photo Rag Baryta for B&W!

I can't wait to do some printing. Perhaps one day I'll be able to afford a big printer myself.
