Infinity Focus?

I have several manual focus lenses that I use with adapters on my Canon 5D, and am wondering how to test for focus at infinity.  I vaguely remember that the way to do it is to record some fine detail in the center of the image at 50X focal length at the widest aperture, and then take more photos at diminishing apertures. If the lens is really focused at infinity, the smaller apertures should not be sharper.

Is this correct, or is there some better way to test for infinity focus?  Or should I take the lenses and camera to a shop with a collimator?
