then you sit in the bar pressing the button on a transmitter
and everything fires off all at the same time

There is a feature called Relay that allows a Pocket Wizard Transceiver Model to act as both a Receiver (To fire the camera) and then instantly switch to a Transmitter (to fire the strobes).
Set your transceiver to Transmit and choose a channel and zones.
Press L and it will turn relay on. (It should now show Transmit and a Channel and receive and a Channel.
Now set it to Receiver and choose a different channel and zone.
Connect the Sync cord to the camera and plug it into port 1 on the pocket wizard. Connect the Motor Drive cord to Port 2.
Now you need a transmitter in your hands to trigger the camera set to the same channel that the transceiver has on receive and a receiver on the strobes set to the same channel that you have the transceiver set on transmit.
It's used often by sports photographers to trigger a remote camera say on a basketball backboard and also trigger the strobes. IF they were set on the same channel the flash would fire at the same time the camera got the signal to fire.
