Printing Issues in MacOS Ventura / Sonoma

Unsure if this is the place for this but I've had a lot of trouble finding photographers talking about the printing issues with Ventura and Sonoma, specifically on an Epson Surecolor P800.

I've been printing for years now with this printer, It's been a great printer. I've been in need of a new laptop for some time, and finally pulled the trigger on a m3 Pro Macbook Pro 14" . I just spent the better part of two days going a bit crazy thinking something was terribly wrong wtih my setup. Almost every print has been different than the last, wildly different.

Finally in a moment of clarity I got my old laptop out, sent the file I was printing over to it, and voila! Printed perfectly.

Now I am always well behind on updating my OS as we all are, scared of what might break in the new system. In the past, if something is not working on a new machine I felt I could install a fresh copy of a previous OS fairly easily and live happily in the past with my plugins and drivers working well in ancient times. This time I tried to do this and the laptop said that the computer is not compatible with Ventura. Upon some small bit of research I found that perhaps solely in the new apple ARM chips they are either preventing old OS's from behing installed, or they are installed a slight variation of the regular release of an OS onto the laptop somehow preventing a revert.

So far the only working solution I have to this after two days of resetting, calibrating, reinstalling, reformating, is to keep an old laptop around on Monterrey or before, and send finished files to that computer to be printed. To confirm it's likely the OS I removed all drivers, .icc profiles, and deleted the printer from the new m3 running Sonoma, and from my old laptop (an m1) running Monterrey. I then reinstalled the printer, drivers, and .icc profiles in the same manner to both computers, and again the monterrey machine is printing fine, and the Sonoma machine is all over the place. The print options dialog box is also a big mess and settings dont stick within it. I've seen some people mention a workaround to open the photo or document in preview, and that application seems to have all the options available (except for .icc), you can then save a preset of those settings in preview and use that preset in photoshop, trying this with the proper .icc loaded provided no joy.

So, long story short, if you are doing a lot of printing, be wary of these two latest Operating systems and the machines they are preinstalled on.

No issues on that and a P900, same OS and M1 EXCEPT the Apple bug where the ColorSync Radio button does not get set correctly, sometimes with Application Manages Color.
It should automatically be set and sometimes is not.
Toggling between Printer and Application Manages Color resets it. Gotta check each time.

I've found the PS print dialogue box in Ventura to be totally unreliable, and unlike all versions prior, I have to check every setting every time. Presets are no longer useful on my system. Does Sonoma at least fix print presets?

Sonoma seems better but I am not ready to state it is 100% fixed.
