Lexjet sunset select matte, finished with satin coating (rolled or sprayed).  Not expensive, easy to work with, and you can get the finish you want when you coat, anything from matte to gloss

I have used 100's of rolls of Lexjets Sunset Select Matt and we love it.
As David says you control the sheen with your topcoat varnish. Our customer base requests are about 75% satin, 25% matt and we get no requests for gloss. Well maybe a handful in 15 years.
With the high cost of satin and gloss canvas it makes really good sense to start with matte and finish to taste.

Breathing Color made some great canvas. But yes, they are expensive.
