Upgrade PC

Would appreciate some help to decide if my current PC would be worth upgrading. 
I have recently started editing video projects and think there is room for improved performance with these projects.

This was built in 2017

CPU   
Intel Core i7-7700K 4.2 GHz QuadCore 8MB Cache

Motherboard   
ASUS Z170I PRO GAMING

M.2 x4 SSD OS   
Samsung 512 GB 950 Pro NVMe M.2

2x Drives storage   
Seagate BarraCuda 4TB 3.5 inch

RAM   
Crucial Ballistix Sport 32GB DDR4

Graphics Card   
Gigabyte GeForce GTX 1060 3GB Mini ITX

Power Supply   
Corsair RM450

Case   
Cooler Master Elite 130 mini-ITX

If your software can make good use of multiple cores, how about an Intel  i7-9700K with 8 cores? Also I'd double the RAM and get SSDs for storage. Otherwise I have no suggestions.

if you are not crimped significantly on performance, i would wait for PCIe 5 based motherboards and cards to become mainstream over the next year or so. NVMe 2.0x adoption as well.

The jump from PCIe 3 to 5 should be noticeable.

What type of video editing? HD or 4K?  What is the source video feeds like & are you doing heavy editing or light editing?

Using a 2.5" SSD as your video source drive will make things faster - the 1-2tb sized SSD's are great & cost effective.

Your current CPU/Motherboard combo is maxed out - there isn't a simple upgrade there.

A new computer would be much faster - for example a Lenovo THINKSTATION P350 TOWER I7-11700K 16GB 512GB SSD W10P - 30E3003KUS  - about $1,400.00 - has a CPU Benchmark of 24,727 vs. your CPU Benchmark of 9,662 (2.5 times faster). Or, a Lenovo THINKSTATION P620 RYZEN 3945WX 16GB 512GB SSD W10P - 30E00006US - about $2,400.00 - has a CPU Benchmark of 33,441 (3.5 times faster). But you would need to add memory to get it up to at least 32 GB, a video card (at least $300.00, although your video card has good specs) and two storage drives (4TB SSD's would be at least $350.00 each), so it's an expensive investment. Your computer was top-of-the-line when you got it and you got 5 years out of it, so it was a good investment. And, a new machine with the above specs would also be top of the line, so you should get a long useful life from it as well.

Your old video card is 3 generations old (about to be 4 as the 4000 series is about to be released) and is the bottom of the line from when it was new.  I would suggest getting the fastest processor you feel comfortable purchasing along with at least 32GB of memory, a minimum of a 512GB SSD for the system and then data drives.
