Non Blue Ring Lens Focusing

I have a 110mm 2.8 non blue ring lens. Can some one help me with techniques with auto focus and recompose doing portrait work. Example focusing on the eye the recomposing to include upper body.

   Also tried manually focusing but was unable to get consistent results. Any pointers?
