Gentle movement up and down is as important as all other movements that you can do with a ballhead or cube in my opinion;
ergo a good working center column is a good thing to have.

I can remove my centre column and attach it to one of the legs and use it as a monopod. The tripod is not as solid as the good old ones but then again the camera is half the weight it used to be and a bag hanging from the centre will hold it down.

I use it if I need the height.  In my experience, paranoia about stability runs rampant in the "serious" photography world.  If you want to find out for your specific setups, just test it yourself and see.

In studio I use a large studio stand. It’s pretty much just a centre column if you think about it. Very stable. My point is not all centre columns are created equal.
