White birds, especially in bright light tend to blow out quite easily even with proper exposure so I generally add a parametric curve in post with the middle pulled down a hair to mute the brights and the shoulder up a tad to open the shadows. This tends to work better than trying to clip out the brights using the highlights or whites adjustment sliders that tend to muddy the waters.
