I can see in Capture One that I can use process recipes but I can see no way to change the rendering intent other than in preferences. Am I missing something with regards the rendering intent or do I need to just do it in preferences?

AFAIK, you can only change the rendering intent in the preferences setup.
I can understand what you are trying to achieve, but do try the very powerful Advanced Color Editor. It will allow tweaking your image colors so that they better fit into the gamut you are distributing the colors and tones in, and in the way you prefer. What's more, in that tool, you can turn the settings into a new ICC profile that you can use when importing similar images or subject matter.
Alternatively, you can create Styles to apply multiple default settings at the same time, even upon importing the raw files.
That will allow optimizing the use of either Perceptual or Relative Colorimetric rendering intents, with your specific types of image subjects, so that the need to switch between them is reduced.
