Most mirrorless cameras, by default, adjusts the EVF (and LCD) for the exposure.
A handful are now doing a "simulated OVF" where the EVF ignores the exposure.
Keep in mind that in most cases, mirrorless cameras use the JPEG engine to generate the EVF views and histogram. It will probably take a little practice to translate from the EVF view to a good RAW file.
