What are you talking about ? I shoot studio with a 180mm often and don't see any problems. Many shoot studio with 70-200 too and seems to not have problems...
Not sure what you're getting at.
In studio, you're often shooting stopped-down against backdrops and with strobes, so maximum aperture and wide-open performance don't matter, and bokeh barely does. You can use just about any lens and get good results.
Out of studio, you're often dealing with busy backdrops you want to blur into a creamy smoothness, or low light situations (e.g. streetlights or dimly-lit spaces) where a wider aperture helps. The lens matters much more here. 105/1.4 won't help much in studio, but should give you a good boost to subject isolation when out of studio.
