Well, the one thing I can tell you is that if you really want landscape shots, don't go in mid-winter.  I was there in late December, and there was a dense haze the entire time - it looked like bad smog as far as photos were concerned, though it was water vapor instead of pollution.

On the other hand, the medieval towns were glorious - nearly empty of tourists, and fine photography conditions for anything that didn't involve distant landscapes.

I was there this summer but only stopped in Siena. Beautiful town, completely stuck in the Middle Ages. Would highly recommend. I would love to go back and spend more time.

I fully second Lisa's suggestion, try to avoid winter if your interest is in landscape photography. I have a preference for spring but fall also offers beautiful landscape.

Tuscany offers a lot in terms of landscape photography.
1) Countryside
The best area is located in the middle of the region, in a triangle between the city of Florence, Pisa and Siena.
Go to SANTA LUCE or ORCIANO PISANO villages (near Pisa) for country landscape, than VOLTERRA village, and than proceed to SAN GIMIGNANO, MONTERIGGIONI villages and surroundings: they are good for the landscapes and the villages themselves.
Siena city is also nice for photography.
Than MASSA MARITTIMA and GAVORRANOvillages and the surrounding area.

2) Sea
In addition to the sandy coast in VIAREGGIO area, there is rocky coast in the south of the region, in LIVORNO area.
Closed to Tuscany, at its neighbord, 2,5 hours drive from Florence, there is the CINQUE TERRE area, five villages (RIOMAGGIORE, MANAROLA, CORNIGLIA, VERNAZZA, MONTEROSSO) right on the rocky sea, with lovely landscape and gorgeous sunsets.

I am living in LUCCA, Tuscany, which is also a very nice city, with the impressive Walls surrounding the city : go on Google Earth and have a look of the different places.

Best period to come here is from April to the beginning of June: July and Agoust are hot and very crowded of turists.

Enjoy your trip and best regards!

I would highly recommend going to Tuscany when the poppies are out as they add so much colour to locations. I went last May for a week and we ended up not having to drive to far to each location. The belvedere is a must, but you might have to scout about to get an viewpoint that hasn't been done to death.

Here are some of my shots -

For the classic shots you might want to spend some time around San Quiricio d'Orcia. I toured around there in September a few years back which was probably a little late as the fields were all ploughed and harvested. However, it was still a beautiful part of the world and you'll find yourself racing around the tiny back roads looking for prime photo sites.
