What do you use CMYK profiles for? Why make CMYK profiles?Are they better than RGB profiles?

CMYK profiles are quite useful when you need to control K independently from CMY - for example you want to print text with pure K without any CMY addition. A CMYK profile lets you also control GCR, so you can decide if you want to build neutrals using more CMY and reduce appearance of raster grain, or more K and reduce metameric defects in artificial light. More aggressive GCR also saves ink/toner.
