Where's my usual Epson SC-P800 printing options panel?

I was setting up to print a pano and I noticed that my familiar options panel didn't display. All I get is what looks like a simplified panel and there's no option for choosing luster paper. Also, wasn't able to run a nozzle check through System Preferences. Running Mac Big Sur 11.3.1 and printing through PS. I ran the Epson Updater and that didn't change anything. I noticed a warning on the Epson site about problems with Big Sur. I'm wondering if I should have tried installing the driver V.10.85 from the Epson site.

Do you have the IP driver loaded, it is the one you need.
 The Bonjour is crippled if it happens to be what you are using.
If you do not have a printer settings selection you have the wrong one.

Finally solved the problem. I deleted the printer in System Prefs and when adding it again, I made sure that the AirPrint option was unchecked. It seems that the software, either at the Apple end or the Epson end, will spontaneously change it.

NEVER allow Apple's updates to mess with any printer drivers, especially from Epson. Go to the source and download their drivers.
