You can IF the machine you want to put it on is a type of model that came with Mojave or older OSX-systems...
The system has to have the drivers for the hardware.
But yes, Apple makes it more difficult to find the install software... They really want to push you to the latest... (bugs)

As much as I've enjoyed the old 5,1 Mac Pro, the lack of Thunderbolt 3 speeds has literally been slowing me down...

I had a Hackintosh made for me, just because what i wanted was a kind of Tower with everything in it like the macpro 5.1 was.
So now i have a custom build machine with thunderbolt3; But i have never used it for everything i need is put in the box.
No clutter, very short connecting distances, cheap upgrades. (I have less problems than the Macpro2019 on catalina)

I updated my new iMac 5k and 16" Macbook pro to Catalina and what a mistake. My profile colors are all over the place, unusable. Presently printing out of my old 2009 mac Pro.
Suggestions? Maybe start another thread.

you could reverse the jump with timemachine?
Have not heard anything good about Catalina so far...

I've had no issues with Catalina on my iMac or my MBP.  Neither has my wife or any of my friends.

I've had no issues with Catalina on my iMac or my MBP.  Neither has my wife or any of my friends.
The only issue I've had is Time Machine and attempting to recover old emails IN Apple Mail. Used to work, now doesn't. Others have reported this issue on Apple forums. Otherwise, everything seems fine.

There have been many years of cautions about Mac OS upgrades from many folks. Some. eg Lloyd Chambers, have been more vehement about it than others. I confess, even though I'm among the cautious, (still on Mojave),

I wonder how some people seem to have so many problems (especially with Catalina?) whereas others seem to glide along. They do the upgrade and somehow, life goes on. I'd love to hear from those more savvy about why this seems to be the case. The obvious answer is "other software," but I'm mainly interested in Lightroom Classic and Photoshop 2020, and, of course, my beloved Epson 3880 printer. With the impending chip switch, I too am wondering if it's time to trash my Mac Pro 2013 "trashcan" and get something new before the inevitable confusion around the new chips gets going. At least with an iMac 2019 I could "revert" to Mojave assuming such a machine would ship with Catalina. I don't want to jump out of the frying pan into the fire though.

Opinions and experiences welcome.

I hear you, Eric! This is why I use may machines as long as I can and wait as long as possible to upgrade to a new OS.

Since I run a fine art printing studio and handle terabytes of customer's files, not to mention my own precious little pictures, I'm ultra-nervous when I read reports of problems with color profiles, storage/hard drive access issues and general bugginess (computers not sleeping.)

So while my initial inquiry here has generated enough positive answers to my particular upgrade questions, I'm sure I'll be asking it again in regards to whatever my next hardware upgrade is and OS Big Sur, or OS Alcatraz or whatever comes next...
