I think it depends on how much space you need. Your approach is perfect, however, with my 27TB of current Data single drive backups are not such a great thing.

Agreed.  It seemed like a good idea at the time. :)

I bought a two-bay, hardware RAID 1 enclosure from Mobius.  Two 8TB drives are mirror images of each other and either one can be read on any other Windows machine.

So far, so good.  Big, fast and quiet.  In fact, I may buy another one.  I have two more 8TB drives just looking for something to do. :)
