There isn't many of that type of paper available in larger than 17x22 besides Epson Fiber and our Simply Elegant Gold Fiber (24"x36" 50 sheets); not aware of other manufactures though with possible options.
As long as the paper isn't too thick to bend when fed in the Pro-2000, it should be ok. There will most likely be some difference between Epson Fiber and Canson Baryta (different brands of course), but depends on the settings used since different settings will provide a different output. Fiber and Baryta are pretty close on finish and should use the same setting.
Since there isn't a profile available from Epson (on their paper) for a Canon printer, you may want to use a luster setting. Try a heavy weight media type for the paper thickness, but luster profile should work since it's not too glossy.
