Is there a way to automate doing this?

Sadly not within Lightroom.

What you can do is fool it by stuffing the extra fields into the Copyright field, and then using the watermark "Simple Copyright Watermark". My Search Replace Transfer plugin could copy the caption or filename or whatever into Copyright. Not very satisfactory though.
