I've been using it for a week or so.  Works very well on 10.6.2.  There's been one revision so  now its 5.0.1.
I'm running it on a MacBook Pro and a MacPro.

Well that's an easy question.

3.7.9 is not compatible with Snow Leopard.

JPG ICC profiles will be WAY funky, and you'll experience other random small glitches.

5.0.1 is quite stable and as a company we are very close to making a recommendation for our customers to switch to 5.0.1.

Note that 4.8.3+10.6.2 and 4.8.2+10.5.8 have been extremely stable for the vast majority of our users across a variety of machines. I'm sorry to hear about John-S's issues, but they are not the norm.
