Title: Z3100 Paper Type Selection Questions

First, what difference does choosing HP paper versus generic on the front panel have on profiles?  I ran across a post here that said choosing the HP paper type over the generic version (i.e. HP Professional Satin Photo Paper rather than Photo Semi-Gloss/Satin) produces a wider gamut.  Any truth to that?

And secondly, with the generic types there are two additional choice offered: one for More Ink and one for Less Ink.  When should these be used?

Is there a document by HP that explains this stuff?

Take a look at the seventh link on this page, called Working with Other Commercially Available Papers.

It shows you the parameters that are lumped together when you pick a particular paper type, especially ink limiting, choice of blacks, and gloss enhancer options.  Unfortunately, this is the most recent document on the subject (2007), and HP says that they have no plans to update it, even though they have added presets and done some updates to the presets.  It tells you how to trick the printer, on occasion.  For instance telling it that paper backed silk fabric is actually Fine Art Paper >250gsm, to get quad blacks and the highest ink load.  They won't let us fully adjust these parameters independently, so this is the system we are forced to work with the dial these specifics in for each substrate.
