does anybody know how to find out about the number of actuations a Leaf Back back has had?

If an Aptus model.  On the LCD screen Go to Set up>About.

It is not an Aptus. It is a Valeo. Can I see it somewhere in Leaf Capture? If yes, in which version?

I could not find anything on LC 11 that could tell you the number of actuations.  Sorry, I don't have V8 anymore to check there as well.
