For me, the most significant updates are that the program now reads Nikon's embedded profiles for Nikkor Z lenses and the improved overlay tool. To can read more about the update go to http://alexonraw.com/capture-one-12-1-new-features-overview/

This new version resets your workspace to program default so any customization, changes, preferences, etc are reset to the program defaults. Make sure you save your workspace prior to running the upgrade so that you can quickly recall it after the upgrade.

unbelievably lame UI design decision that grid lines are disappearing when you adjust the crop... one of the things that their UI designers need to learn from ACR for example (where it is done properly) ... I need to go to different dialog to switch it on...

You need to check the box "Show Grid While Cropping" in the crop pane. See attached screenshot.

And in addition, the new Grid tool offers an option to Show the grid, or not (to avoid clutter), and whether to follow the crop contours, or the original image contours (see attachment). That provides lots of customizable control over the tool, including a choice of grid-color, or other settings that are relevant to only a specific type of grid.
It is a kind of a default setting that applies to all images, but one can easily switch settings should e.g. a different color be better for one specific image.

If you mean “guides” there is a new guides tool, but it is limited to Capture One Studio (https://www.dtcommercialphoto.com/capture-one-studio/).
