The preview image in epson scan seems to be quite different to the TIF file it outputs.

Are you using a fully color managed workflow ?
Is the preview based on fewer pixels ? There can be some shift because of this.
Is there a white balance being applied ?
It looks like a magenta color cast is created.

There is no whitebalance shift in the second example, only a midtones/contrast shift.

Does anyone know how to fix this so the final image is the same as the one I see in the preview?
Is this is a systematic problem you've been having for a long time on all photos you scan? What kind of slide is it - Kodachrome, or other?
Have you tried using a more professional scanning application such as SilverFast or Vuescan, which have enhanced colour management capabilities? For the preview to match the eventual scanned output, the scanner profile and the application need to provide for coherent feedback between what gets displayed and what gets scanned. Your display needs to be correctly color managed, as does the scanner in respect of the quality of the scanner profile.
