I'm running on a mid 2014 Macbook Pro, 2.8Ghz i7 with 16Gb and SSD. When I start brushing on adjustment layers everything starts to grind badly to a halt. The fans kick in and even simple operations - brush stroke, local exposure, vignette, become intolerably slow. Any tips, thoughts?

You could tweak your OpenCL (hardware acceleration) Display settings in Preferences of Capture One, for a start. If it is set to None, enable it and vice versa.
While in the Preferences, check your preview cache settings.
Next, you may be on the save side with 16GB RAM, but how much is free when things start to slow down. Use Activity Monitor to check that.
You could also isolate the issue by opening a new session/catalog with only one or a few images.
And of course you are up to date with OS X and CO 9. ;)

I'm stuck with 16g on a Macbook, I'm afraid, and this Macbook's GPU isn't on the approved list just yet.
Preview size was large, though, at 2560. I've dropped it to 1280 I can see that making a difference.

You could try my suggestion of isolating the issue in a new session/catalog

I don't' follow. I know already that it's while I'm painting layers, I'm not sure how I could narrow it down further than that.
