Francois - your mention of Cassata brings back memories of the 1970s and 1980s in India where it was a popular item served at wedding receptions. I think the Indian article is a variation on the original Italian. See -

Exactly! When I was a kid, my mom used to tell me to avoid Cassata ice-cream because colors like that could only be 100% chemical and probably not so good for my health ;D
