For the second consecutive day, Microsoft have updated Windows and installed the Edge browser without asking for permission. Is there any way to opt-out of automatic updates?
A side effect of these auto-updates is my colour management has been screwed and the profile is not loading.

What version of Windows? Home, pro, ...?
You could use Firefox instead of edge.

Here is a way to stay on a specific win10 release

Group policies aren't available for Windows 10 Home, hence my question

I'm running the Peo version.

OK. You can do that group policy change as linked above, but it only lets you stick at a "feature" update. These updates happen twice a year. It doesn't prevent you from getting monthly updates. Besides, feature updates are optional now for a long period of time. You have to actively choose to install them - they are not automatic.
If it is a device driver update issue, you can also stop them from automatically happening. If so let me know and I will get you instructions.
If it is the monthly windows update, you can't stop them (security updates are important), but can delay them for up to 35 days. There is probably a hack to get around this, but I wouldn't recommend going that route.
