How practical/useful would an external SSD connected via Thunderbolt to my late 2013 Mac Pro with 500 GB SSD/Flash HD, be to use as a scratch disk for PS CC 2014/LR 5?

Let me see if I understand correctly: You want to have the files on the internal SSD and the scratch disk on an external array?
If that is the case, I really don't know, The bandwidth of the external boxes is more than enough but there is the issue of random access speed (the true to be told we used HD just fine).

This baby is an option as it has very fast random access:

Nevertheless I will do it the other way around. I like the Lacie  5Big a lot is super fast  (the 30TB can almost get a gigabyte per second on some tests using raid 0)

Not an external array as much as just a single, portable, 240GB SSD Thunderbolt drive. My scratch disk size runs about 41 GB on my main SSD (500 GB with 400 GB free).
