There are many ways to do this but if you use Adobe Lightroom it's incredibly easy.  In the Export dialogue box you've got the option to "watermark" your image.  You can use this feature to add a copyright symbol.  I use it to put an unobtrusive watermark of my website URL on every photo that goes up on the web.

If you mean the "©" symbol, hold down the Alt key and type 0169 and then release the Alt key and you get a ©

In PS you'll need to place this in a text layer.

On a Mac it's easier: press [OPT] + C.
Regarding the software, Lightroom is the way to go.

With my italian keyboard:
OPT + C = ©
OPT + G = ∞

Out of curiosity, how does one access the rest of the ascii extended character set on a Mac? On a PC one uses ALT+ the key combination to produce the desired character.

Since you can use Shift/Shift+Opt/Opt on almost any key, you have a LARGE choice of symbols without having to remember codes.

^^ Way better than looking up ascii extended code charts, or just remembering the codes by way of brute force.
