I'm afraid it's to complicated to aswer your question in a few words, so only a few suggestions.
- if you know almost nothing, maybe start here:

- AFAIK The "Pro" version of Mirage software can create ICC profiles using Spectroproofer. If it's a basic version of Mirage, you need to use Epson software to read targets, and create profiles with ProfileMaker Packaging, which is a little bit more complicated. One could wonder why the dealer sold you Mirage AND ProfileMaker Packaging...
- hard to predict what's available in the place you live, but Epson Premium Luster is a good choice if it's priced reasonably. As for fine art papers, I'd get Hahnemuehle, Canson, Harman and Epson samples and ask my clients which they like most. Epson has a fancy DIGIgraphie programme, so you can also follow his suggestions regarding fine art papers:
