Is there a way for the new Sinar CaptureShop 6 to open an old .cs16 file? Probably from a 54M or earlier. Captured with Sinar 5.4.x or earlier?

if you talking about .sti files - yes, you can see this files locked in the capture shop 6.0. you can mark the files / tumbnails / pictures you want to save  and you have to go then to "save as...". you will have then new files saved as .dng files that you can process with capture shop 6.0
