IMO, cool, dark place is where to keep your ink. I wouldn't want to even think of putting it in a fridge.
Though the years with my Epson printers, I've even had ink in one printer for more than 2 years without problems. Simply remove the cart and shake it to mix it up to be on the safe side.
I've had other ink given to me that's been a year or two out of date. I simply shaked it and there seemed to be no difference on the prints.
My current Epson, a 9900, came with several nearly-empty carts, replaced during a cleaning cycle, a few as old as 2009. I noticed no problems other than a 150ml cart having just 1% left according to the panel and then printing lots of 24x36 canvas prints before needing to be changed.
