In the EXIF data of my files there's a parameter called "Sub-second Time", "Sub-second Time Digitized" and "Sub-second Time Original". What are these parameters? Can they be changed? If so, how does that affect the image?

They hold fractions of a second for each of the corresponding date/time fields.

they are defined in the EXIF standard but I dont recall ever seeing them actually used (ie. filled in) by the camera

Chris: Many cameras are now capable of shooting multiple exposures per second - the date/time fields in the original exif specification only went to seconds.
