It might be more interesting if cameras instead offered a drop-in 16:9 eyepiece for the viewfinder to envision how something looks in 16:9.

Well, the lens is circular. The farther away from circular your sensor is, the less advantage you're taking of the available image area.

In my opinion, it would be better if every sensor was square than 5:4, 4:3, 3:2 or 16:9, allowing for cropping after shooting instead.

Compose for 16:9 if you need to, but do the cropping later; maybe you'll find that you really wanted 16:10.
