You would want to convert your images to NTSC, or AdobeRGB (they are practically identical) prior to compiling your movie. Compiling sRGB images will have the same effect as assigning AdobeRGB to sRGB images in Photoshop.
As a side note, I prefer using Quicktime Player 7 to compile time lapse movies. Just open Quicktime Player 7, choose "Open Image Sequence" from the File menu, select a folder of images and set your playback rate. Couldn't be easier! I have Quicktime Pro which activates all of the menu items in Quicktime Player 7, so I forget if this is one of the items that requires the pro license or not. Anyway, have fun - sounds like a fun project!
