Using a Sinar eVolution 75H, you have the choice of 1 shot or 4 shot. Both give a 190MB in Photoshop. What is the difference and why does both files give the same file size?

The different file sizes are as following:
File size RAW: 1-shot 68 MB, 4-shot 260 MB
File size at 48 bit TIFF: 190 MB
Both the single and the multishot files have the same size in Tiff format, but the raw single shot does contain only 1/3 of the colour information since the CCD is covered with a pattern of Red, Green and Blue pixels, each single pixel capturing the colour information for the colour filter it is fitted on top of it. Since it needs for each pixel all 3 basic R, G & B colours to produce a colour image, the 2 missing colours are calculated by interpolation on the software level, by looking at adjacent pixels and doing some kind of complicated but quite accurate "guess-work". This interpolation of the 2 missing colours gives a files which is 3 times heavier once interpolated.
The multishot does not need to get interpolated, since the information for the 3 colours are captured during the exposure of the CCD.
