Anyone know how to fix the latch on the front of this thing? Tray keeps flopping open when I am done.

It is a pop catch. Both the pop out piece and the door have a small lip . Open the door and check the latch closely to make sue it pops in and out when pushed. Make sure nothing is broken off. Finally look closely at the door ,the little lip on the door cannot be broken off or the door will not close. If the lip on the door is broken off the door must be replaced.

If the metal part on the door is coming off/staying on the magnet, glue it back in place. The adhesive that Epson uses isn't very strong and appears to be affected by humidity and probably vibration. I think the earlier ones have a different type of catch;mine is almost a year old and has a magnetic catch.

If it's the old style latch, and not the newer magnet latch, you can buy the door / latch replacement parts for not too much, and retrofit it onto the 3800.  Downside is you have to figure out how to remove both end panels, front screws, etc., but you eventually figure it out.

If it is the older style door (non-magnetic catch) a simple approach be to create a small latch on the outside using velcro.  It might not be aesthetically pleasing but it would keep the door in place.

The magnet on my catch has come off a few times, but I've always been able simply to press it back in place and it sticks. One of these days I'll put a better glue on it (or try the Velcro idea), but so far the old glue can be persuaded to hold it again for a month or two.
