You can ignore the PPI/DPI 110% until it comes time to print.  72 ppi (pixels per inch) is a throwback to the days when the resolutiom of most monitors was that.  300 is a reasonable standard for printing, but can range from the low 200's to the high 300's.   If you're printing with an EPSON, don't get confused with their 1440 vs 2880 settings - remember it takes several droplets of ink to represent on pixel of digital information.

The DPI tag in a digital image is totally irrelevant. Its only purpose is to indirectly specify a default print size, and changing it has absolutely no effect on either the size or resolution of your image file. Most print programs (Photoshop, QImage, etc.) ignore the DPI tag anyway, so setting it to 1 or 1000 will not affect the image onscreen or the final print in any manner whatsoever.

There's no dpi setting that you can set in your camera. If you shoot RAW you can set the desired dpi in your Raw converter. Anyway, follow Tim's recommendation. DPI is only relevant when you reach the final stage of processing (ie print).

If you are shooting RAW, and using Camera RAW through PS CS, the box that shows you the ppi can be adjusted.  You could set it to 300.  Since I typically print at 240 ppi, I set mine to 240.  That way, when I "Print with preview", I can see how the image sits on the paper and I don't need to "scale it to fit."
