Can anyone tell me how to create the copyright symbol (letter C enclosed by a circle) that I can then embed into my copyright metadata or watermark images?

On PCs press down ALT and type "0169" on the number pad. Or you can just copy-paste the symbol from here: ©

Or if you are on a laptop without a separate number pad and have Windows XP or similar, go to: Start - All Programs - Accessories - System Tools - Character Map. Then choose one of many © signs in the font of your choice.

If you're running OS X, type Option+G to get ©.
