1dsMKII and 1dMKII have color histograms.  That would take care of normal blow outs in individual color channels.  However nothing would ever show on a histogram for these color noise things I got a couple of times under very specific circumstances (shooting into the sun and very bright specular highlights on water and/or ice).
There just isn't any set of rules for shooting, composing, or processing that covers all possible scenarios.  There's no substitute for experience, and lots of it.  I won't get caught again by that situation that ruined a couple of sequences of shots, but who knows what further learning experiences are just around the corner?

May well switch to CS, though my PS needs are minimal.

If I could set a grey point using Elements, I'd be happy.

Get PSCS and a Gretag-Macbeth Color Checker chart, then read this article. Your RAW conversions will have much more accurate color.
