What do I need to shoot with?

Amateur  question I know...........
I shoot aerial stills, I would like to shoot some video, camera mounts aside, what do I need to capture useful footage that can be sold via film libraries, does a 5DmkII cut it or does it need to be more of a RED ? Audio is not an issue. If I need to use software smoothing (I will shoot from a stabilised platform) do some cameras produce footage that can handle this better?

Lets try a different approach.
Please explain the formats and what market is serviced by which format. Looking at RED's they have various size sensors from small to 617. Is the smallest for Wedding and cheap corporate work, where does the HD TV quality start?
