Quick question: Can I use a UDMA card in a camera that I'm not sure if it's UDMA or not? Or, more to the point, anyone out there using UDMA cards in their 5d and/or 40d?

i'm using a UDMA card in 5D and 40D and understand that they can be used in anything - you just don't get any benefit
