File Interpolation for Large Format Printing

Someone has asked me to provide them with a image uprezzed for printing 8' x 4'.
Can this be done with an image taken with a Canon 5D? Also, which software would you recommend I use to do this? Your feedback appreciated.

I think the first question I would ask is who is the one going to do the output and also what device is he using.  The person printing may not want you to upsize because he may have his own routine that works best for his output device.  I think you may need to find out first.
