So I just installed the Epson beta drivers under 10.5.2 to try to fix the printing issues going on with Lightroom and all of my options to select things like paper type and turn off colorsync are gone. This is the dialog window I get now (this was in PS, but it is the same all over the OS):

Did you delete your 3800 printer and re-install it?
The only other thought is somehow it's using the built in OS driver instead of the Epson Leopard driver.
Either way, I would try to delete the printer and re-create it.
