The jump in motion was just to obvious and overlapping dialogue did not work either. Next time we will use two cameras for interviews.
People have made television docos for decades single camera.
I think going multi-cam before you know what you are doing will instill weakness in shooting.
So how is the interview covered with single cam?

Noddies and handsCut across audio chops with CU of gesticulating hands or an over the shoulder of the interviewer nodding.
Non synch wideA wide shot from far enough back or with duff enough focus to appear to be a shot of the interviewer.
Watch some telly (painful I know) and try and work out how it was shot, how many cameras? how many crews etc.
