Just an FYI to the OP.  I bought and installed an SC P800 today.  Ran calibration image test prints on Canson Baryta Photographique, Ilford Gold Fibre Silk and Hahn Fine Art Baryta Satin.  Paper thickness setting to "5," platen gap normal.
ZERO head strikes.

I'm guessing your printer has issues.  Do test with Epson Exhibition Fiber... if you get the same head strike behavior Epson will have to take action.

Good luck in sorting it out and please keep us informed as you work toward resolution.

So some observations with the Exhibition Fiber;
1) No headstrikes whatsoever
2) Pizza wheel marks are present on deep black parts also on this paper

The Exhibition Fiber is however a bit to blueish for my taste (OBA) so it's not an option for me.
I'm returning the printer this week and wait for Canon.

Hi Kevin,

I'm printing through Lightroom and with the Epson Driver (latest version) on OSX El Capitan.

There are my settings;
Papersize: A2
Profile: Cansons for the printer/paper combo
Resolution: 2880
Paper type: Ultra Premium Luster
High-Speed: Off
Platen Gap: Wide
Paper thickness: 5

I have mostly tried the front feeding.

  I know UPL is a common "Paper type" for 3rd party papers and works well with other Epson printers.  However in this case could this setting be overriding the platen and thickness settings.  e.g. the Exhibition Fiber setting worked on that thicker paper.  Just a thought....

probably printer defect, but could you check the quality setting ? set to quality instead of speed.
